The name

Nightshade, like the family tree.

Peppers, tomatillos, tomatoes, potatoes — the nightshade family is where nearly every good hot sauce starts.

So we took the family name and grew it into a label. Since 2024, every batch has been a small, numbered experiment: ferment the fruit and chiles, taste it with the market crowd, bottle what works — and when the batch is gone, it's gone.

The blossom on the label is the nightshade flower itself: quiet, hardy, a lot more interesting than it looks. That's the idea.

The lineup

Five experiments, on the shelf.

Every recipe gets a number when it's bottled. When a batch runs out, its number retires with it — what's below is what the tent had last weekend.

Experiment No. 422:

Bramble & Smoke

Blueberry – Blackberry – Chipotle

Slow-sweet berries up front; the chipotle settles in behind and smolders long after the first taste. Dark, jammy, unexpected.

Experiment No. 726:

Seoul ▼ Fire

Kimchi – Habanero

A fermented funk with K-market swagger — kimchi depth first, then the habanero arrives like a headliner. The one people buy twice.

Experiment No. 007:

A Green One

Serrano – Jalapeño – Poblano

The classic green trio — bright, grassy, and generous. License-plate approval not included, but it did earn the very first number.

Experiment No. 116:

Island Vibes

Mango – Habanero – Toasted Corn

Front porch in the tropics: mango sweetness over toasted-corn warmth, with habanero sneaking in from the back step.

Blush & Burn

Strawberry ferment

A pretty pink pour with a sneaky, slow-building burn. Dessert at first sip, hot sauce by the second.

The method

Slow food, fast shelf.

01

Ferment

Every bottle starts as a ferment — the label says so, and it's the whole point. Time, salt patience, and chiles doing what chiles do.

02

Keep it small

Batches stay deliberately small so each one can be tuned, tasted, and adjusted. No batch is too precious to rework if it isn't right.

03

Number & pour

Finished batches get their experiment number and a spot on the market table. Tasters decide; sell-outs decide faster.
